What is being served for the first time ever in Singapore will be a 1300days special feed Tokusen Matsusaka Beef.
What is Tokusen Matsusaka Ushi?
Tokusen Matsusaka Ushi, or Specialty Matsusaka Cattle, pays tribute to the artisan skills and care that Matsusaka farmers take to nurture their cattle since the Meiji era. Traditional methods, and highly guarded family cattle feed formulas, perfected over generations, and passed down, leaving only a handful of ranches with the skill and experience to raise Tokusen Matsusaka Cattle. The key distinctions that set Tokusen Matsusaka Beef apart from any other wagyu beef in Japan and the world are: Only virgin female cattle (heifers) are raised to become Tokusen Matsusaka Beef Calves have to originate from Tajima, Hyogo Prefecture Tokusen Matsusaka Cattle must be nurtured and specially fed for a min. 900 days, making them of a min. age of 38 months and above. The longest fed Tokusen Matsusaka Cattle was of 71 months of age. We intend to break that record in the near future by raising one till 72 months of age Tokusen Matsusaka Beef is GI Certified, taking into recognition the specialised skills required in nurturing Matsusaka cattle for a much longer period of time
[For reference: Kobe Beef (mostly castrated bulls) that are generally slaughtered at 27 months, would have been specially fed for only about 548 days.]
Raising Tokusen Matsusaka Cattle to meet the min.900 days of special feed is both costly and risky, and requires a high level of experience and individual care and nurturing. This is why today, there are only a handful of Matsusaka ranches that have the experience and ability to continue raising a small number of Tokusen Matsusaka Cattle, that make up about only 2-3% of all Matsusaka cattle, and less than 0.1% of all Japanese wagyu. Top quality Tokusen Matsusaka beef is so rare and highly sort after, that they are already pre-sold in Japan, to exclusive private dining establishments a year ahead, and will almost never leave Japan. Mitsu Boshi Group is extremely humbled and proud to be able to obtain an allocation of one Tokusen Matsusaka Cattle per year, or one in two years, depending. That we can export out of Japan and offer this ultra-unique experience to our partners and clients in Singapore, Hong Kong, and USA.
